I HAVE A LOVE AFFAIR WITH VEGETABLES! There. I said it. Woo!
I have no shame in admitting some of my guilty pleasures include pizza and juicy, cheddar-smothered cheeseburgers. But most of all, I love a meal loaded with veggies. I’ll take veggies in a salad, on a sandwich, in a wrap, in pasta, on their own roasted, sauteed, caramelized; whatever, man! Give them to me! How ’bout that veggie sandwich above? Tuesday night Dinner Win this week!!
Vegetables are my fave for a number of reasons:
- Extreme variety! There are vegetables in this world I know I’ve never even heard of. I don’t agree when one says, “I don’t like vegetables.”
It ain’t true! You have not tried them all. Stop believing that about yourself and open your
heartmouth to a tasty adventure!
- Flavors and textures! Some are sweet, some are bitter, some are soft, some are crunchy – shoot, there is just no end to the joys they provide!
- Nutrient-density! They are a fantastic, natural source for vitamins, minerals, antioxidants, phytonutrients, and fiber. I emphasize -natural- because I know so many folks feel good about taking a multivitamin. While supplements aren’t bad, they have their place. And their quality is a major factor that plays a role in how much good they actually do for your body. A discussion on supplements is a post on its own, so I’ll save that for another day. In the meantime, take home this simple message: real food beats a pill any day!
- Versatility! Besides the usual side dish, veggies work in a smoothie, dip, sauce, as a soup base, dessert and more! This is another reason that causes me to believe there is room for vegetables in everyone’s life, particularly those who believe they don’t like them. I love exploring taste and texture preferences with people in an effort to help them find exactly what their taste buds love and what their body will thank them for.
Vegetables help us demonstrate power that surges within each of us and begs to be used! I am on a mission to share with you my love of good health through good food, and one way to do that is by helping you to get on the vegetable wagon. And if you are already here with me, hallelujah!
